Episode 36 - Pork and Pineapple Fajitas

Apparently we are on a tex-mex kick lately.  These were delicious.  You should make them soon -tonight even.

1 pork tenderloin
1 package  Clubhouse Mesquite Marinade

3 fresh pineapple rings
1 red pepper, sliced
1 small onion, sliced
1 jalapeno pepper, diced
2 cloves of garlic, minced
2 tsp hot sauce
2 tbsp cilantro, minced
1 tomato, diced

First of all, you NEED the clubhouse marinade.  I have tried tons of other seasonings and nothing works in fajitas like this stuff. Seriously, its amazing.  I promise Clubhouse is not paying me to say that...although they should!  In any case, find it, mix it up according to the package directions and marinate your tenderloin in it for at least 30 minutes.

Grill the pork over medium heat for 10 minutes per side or until it's cooked through but just a little pinkish in the centre.  You can also grill the pineapple at the same time for about 3-4 minutes per side.  When its done, cube it and set it aside.  Meanwhile, cook your veggies.  Heat some oil in a frying pan over medium heat and toss in the peppers, onion and garlic and saute until the veggies start to look wimpy.  Add the hot sauce, stir to coat then decrease the heat to minimum.  Now add in the cilantro, cubed pineapple and tomato.  Let the entire mixture rest until the pork finishes cooking.

Now assemble your fajitas!  1 wrap, a few slices from the pork tenderloin and a good scoop of the veggie mixture.  You can also add things like avocado slices, grated cheese or salsa :)  Delicious.
