Episode 51 - End of Summer Depression

It hit me for real today - my summer is ending.  Starting Monday I have to be professional and smart again.  I will be trapped indoors doomed to watch the last weeks of summer through a tiny window. *le sigh*   The death of summer fun is nigh.  August isn't even over yet, but today felt decidedly Fall-ish.  I wore a jacket!  In August!  Oh, the horror...


It is really hard to make a pout-y face when you're really laughing...


In any case, since the available days left to comfortably bbq are quickly dwindling, I figured we should take advantage of those we have left and came up with this concoction.

Chicken Fajita Sandwiches

2 whole wheat sub buns
So. Much. Cheese. 
4 chicken thighs
Clubhouse Mesquite seasoning prepared according to package directions
1 tbsp olive oil
1/4 green pepper, sliced
1/4 red pepper, sliced
1/2 onion, sliced
a few shakes of hot sauce
1/4 cup Sharp Cheddar Cheese, grated
2 tbsp of your favourite guacamole

Start by preparing the Clubhouse marinade according to the package directions.  (If you can't find this exact marinade...keep looking.  Seriously, it's delicious.  You need it.)  Next, stab your chicken thighs with a fork a few times, give them a bath in the delicious marinade mixture (I like to put everything together in a freezer bag),  then stick it all in the fridge for a few hours to get delicious.

When you're ready to start cooking preheat the bbq to medium high.  Now, have Dawson grill the chicken to perfection.  In the absence of an available Dawson, you could also just do this yourself ( about 8 minutes per side or until all traces of pink are gone and you have some nice grill marks.  During the last 3 minutes of cooking sprinkle on the cheese and let it melt and get all gooey.   If you like your buns toasted, by all means toss them on the grill too.

Meanwhile, saute your peppers and onion in the olive oil.  You can do this outside on the grill with a frying pan if you want, but I usually just use my stove.  Once they're softened, add a few shakes of the hot sauce, give 'em a stir and reduce the heat to low until you're ready to assemble the sandwiches.

To assemble, slice the buns open and slather one side with the guacamole.  Place 2 cheesy chicken thighs on each bun and then top with some of the pepper and onion mixture.   Serve along side some baked refried beans for a Mexican-ish feast!

If today's crappy weather is any indication, Fall is coming my friends.  *tear*  Prepare yourselves and take full advantage of your remaining days!  Go camping! Throw a Bbq!  Visit your local farmer's market!  Wear a bathing suit and strut your stuff - just make sure you don't send summer on it's merry way without a proper send off!  If you are feeling the end of summer depression today too, give yourself a laugh at my expense with this summer-y oldie but goodie:
