Oh, internet, I am le tired. Even worse, I don't have any random quasi-interesting stories to share about my life. I do, however, have a delicious pumpkin recipe to tell you about! Sometimes you just need to eat something pumpkin-y and sweet but can't be bothered to bother with making an entire pie...or maybe you would bother but you'd rather not have to graduate to your fat pants for the next 3 days. Yeah, on those days you should probably just make these instead.
Festive Pumpkin Parfaits
Festive Pumpkin Parfaits
Dawson actually ate a parfait this big... |
1.5 cups milk
3/4 cup pumpkin puree
1 tbsp brown sugar
1/2 tsp cinnamon
pinch of ginger
1/2 pinch (if that's possible) of cloves
crushed ginger cookies
Whipped Cream
Mix the milk, pudding powder and pumpkin together in a bowl then add the sugar, cinnamon, ginger and cloves. Find yourself a reasonably sized (or completely unreasonably sized if your name is Dawson) bowl and start layering - pudding, crushed cookies, pudding, whipped cream and more crushed cookie. Enjoy! Pumpkin pie in a bowl!
Warning - these are addictive!
If you aren't opposed to fat pants I also highly recommend this pumpkin recipe:

For some reason the original recipe makes a ridiculous amount of filling - make the entire crust but only half the filling and you'll be good to go. Mmmm cheesecake. Mmmm pumpkin.
