Episode 82- Stuffed

Tex-Mex Stuffed Peppers

I wish I knew how to Photoshop so I could make that
guacamole look green...
1 lb lean ground beef
1 jalapeno pepper, minced
3 cloves garlic, minced
1 onion, diced
1 package taco seasoning
1/3 cup water
3/4 cup canned black beans, drained and rinsed
1/2 cup frozen corn
hot sauce, to taste
2 large bell peppers, tops cut off and ribs removed
1/2 cup aged cheddar cheese
2 tbsp guacamole

Preheat the oven to 375. Heat a skillet to medium high and start browning up your beef.  Toss in the jalapeno, garlic and onion and continue cooking until the beef is cooked through.  Add in the water and taco seasoning and bring to a boil.  Cook until it reduces and thickens a little bit (about 3 minutes).  Toss in the beans, hot sauce and corn and heat through.  Now for the fun part!  Scoop the beef mixture into your prepared peppers, put the stuffed peppers onto a baking sheet and put the whole thing in the oven for 10 minutes.  Take the peppers out of the oven, top with the cheese and put back in the oven for another 5 minutes so it gets all melty and bubbly.  Mmmm.  Ok, so when the bubbling happens, take the peppers out of the oven, top with a dollop of guac and serve!
