The Pinterest Challenge!

Hello Internet!

Are you on Pinterest? I'm on Pinterest.  I've sunk many an hour into curating my perfect pin boards.  Pretty much every aspect of my life is Pinterest-ified in some way -my house is full of DIY pinterest decor and furniture, I shop for clothes based on outfits I've pinned and I planned almost our entire wedding via creative Pinterest inspiration! It's about time I try out some of my pinned recipes.  While I'm at it, I figured I would make it interesting and challenge myself to make Pinterest recipes for a week straight! Wee! Challenge!

Here's what I will be making this week:

Sunday - Chicken Enchilada Pasta
Monday- Brazilian Shrimp Soup
Tuesday - Mushroom Risotto
Wednesday - Pigs in Ponchos
Thursday - Day Off for Halloween
Friday- Double feature! Melt in Your Mouth Chicken and Buffalo Cauliflower
Saturday - Pumpkin Curry with Chicken Meatballs

I have to take Halloween off, but I'll make up for it the  next day with the double feature.  My plan is to have a post for each day where I will link to the recipes on my pin board and post my review/pictures.  Sounds like fun, right? Wish me luck!

A Year (almost) in Review

Oh haaiiii!  Remember me?  I'm still alive! I didn't actually tear out my hair after that last post...I do plan to get back to writing recipes and posting them along with silly stories about my life, and this place will soon be getting a bit of a face lift.  In the meantime, let us catch up on the past year, shall we?

First there was some of this:
Oh Christmas tree!
And I was pretty bored, so there was a lot of this:
So many polishes!
And then we did some of this:
In Cuba!
Which is where this happened:
I said yes!
Once we got home, we sent out this:
Why wait?  Let's do this!

Which led to parties like this:
Meet Franko!
And then eventually this:
Oh, look at the happy!

Not a bad year, right?  See you soon with some more regular updates :)

Episode 107 - The Incredible Disappearing Blogger!

Oh hi!  Just thought I'd let you know I'm still alive! It seems that at this time every year I fall off the face of the internet for a few weeks.  Maybe I should start making it a scheduled thing... in any case, I'm back!  I've been busying myself with the usual things - work, Zumba, and nail polish (oh, so much nail polish!  I should really start another blog just to tell you about all of the wonderful nail polish!).  I've been cooking, but mostly just remaking a few of my favourite recipes that I've already posted on here (mostly soups) and then a few from some other really great places!  The recipe I'm suggesting today actually comes from Food Network Magazine. If you like fall comfort foods you NEED to make this.  Need.  We've made it twice this fall already and I'd probably still make it again today.

Photo stolen from Food Network Magazine.  Ours was less pretty...but every bit as delicious!
Click the title above for the recipe!

The only change we made was skipping the pancetta, just because we figured 5 slices of bacon was plenty or cured, fatty meat for us.  It works out fine this way.

In other news, Dawson left today to go hunting (with his barber.?!..for reals!) until Wednesday so, it's just me and the animals until then.  Hopefully nothing goes horribly wrong while he's gone.  Have you ever noticed that there are just a few things around the house that are definite "man jobs"?  These are the reasons women need men around...or sorry, not "need", but enjoy having men around. Don't send me any feminist hate mail, mmkay? Some good examples are cleaning the hair clogs out of the shower drain (I gag just thinking about this), taking out the garbage, killing spiders and anything having to do with plumbing.  Because I'm spoiled vacuuming and scraping the frost off of car windows have also been designated "man jobs" in our house.  Here's hoping the pets stop shedding until he gets home...and that my car will fit in the garage.  I don't think "Sorry I can't come to work because my windows are frosty and there's no one here to scrape them" will fly as an excuse at work...

Now finally, this is completely unrelated but I'm putting it here anyway because it's just so darn pretty - my nails with some petty new polishes I got this week - A England's Tristam and St. George.  Do you own these?  You need to own these.

I'm a sucker for a gradient manicure!
So that's all folks!  Hopefully I'll be around more frequently from now on!

Episode 106 - The Internet is Weird

One of the stats that gets collected about my blog is the key words people typed into their search engine to find me.  Most of the results are pretty tame, like people searching for my name, or the word deliciosity or even for a specific recipe.  Others though, are just plain weird.   'Fess up internet!  Which one of you is the one that found my blog by searching for - '"kristy lalonde" police'?  Why were you searching for such a thing?!  Also, why on earth did Google then direct you here?!  WTF?!
Is this what you were looking for?

For the person who searched for "what is the plural of apocalypse", I'm sorry I wasn't more helpful.  I hope you at least found me mildly entertaining.

Episode 102 - What the heck is the plural of Apocalypse?

Seriously?!  What is it?  Apocalypses? Apocalypti? In any case, this is the story of the flea apocalypse.  Brace yourselves, it's a real page turner...or scroll-er?  Make yourself some dinner then join me back here.

Get in my belly!
Baked Eggplant Parmesan

1 eggplant, sliced into rounds
2 eggs, scrambled
1 cup panko breadcrumbs
1/4 cup Parmesan cheese, shredded
salt and pepper, to taste
1 cup tomato sauce (we used Dawson's homemade sauce)
1 ball fresh mozzarella, sliced into rounds
2 panini buns

First, preheat the oven to 375 F and make yourself a breading station - 1 bowl with the eggs, and 1 bowl with the panko, Parmesan and salt and pepper.  Dip the eggplant rounds into the egg, then coat well with the panko and cheese.  Put the breaded eggplant pieces onto a baking sheet and bake for ~20 minutes or until they start to brown.  If you find they're browning unevenly you can turn the pieces halfway through.
When your eggplants are nice and golden, take them out of the oven and turn on your broiler.  Build your sammiches - 1 bun, 3-4 eggplant rounds, a few slices of mozzarella and a big scoop of sauce.  Put the constructed sammiches back on the baking sheet and stick 'em under the broiler for ~3 minutes.  You want the cheese to get nice and melty.  Now serve and enjoy! Yummy!

Ok, so, the flea apocalypse.  It all started when we moved into our new house and found the backyard looking like this:
Holy Crap!
Basically, a complete, overgrown jungle.  As if that weren't annoying enough, this particular overgrown jungle was home to this little thing and 13 of it's nearest and dearest!
What a cutie!
14 cats!  14!  F.O.U.R.T.E.E.N. Wow.
So, being the bleeding-heart animal lover that I am, I couldn't just leave these cats in my backyard to starve (or get shot with Dawson's pellet gun, which he threatened to do after a group of them decided to attack our dog) so I decided to capture them one-by-one and ship them off to our local "no kill" shelter where they would get new homes.

So, for the next 3 weeks we had a pretty steady stream of kitties temporarily living in our basement while they awaited their trip to the shelter.  We fed them, gave them clean litter and were generally pretty darn good to the little fur balls.  It gave me the warm fuzzies...until the fleas happened.
About 3 weeks after the last of the strays left, our own cats started acting even more strangely than normal - making weird noises and grooming themselves like they had kitty-OCD.  A quick google search ("why is my cat acting crazy") lead us to the conclusion that my good deed of kitty-catching resulted in my entire house becoming the birth place of the flea apocalypse. Ugh.

To make an even longer story somewhat shorter, the flea apocalypse cost me two unhappy cats, $400 dollars for some prescription flea repellent and a can of insecticide furniture and carpet spray and my sense of security.  Moral of the story - never do anything nice.  It will make your bank account cry.

In other apocalypse news, I've heard word that the zombie apocalypse in coming.  This is serious, internet!  I want you to know that if this event comes to pass the the official meeting place is our living room.  It's flea-free now and it turns out I have a knack for zombie killing.
That is one dead zombie.  Not bad from 100 yards away!
Also, Dawson has been secretly stockpiling food essentials in our basement.  What a crazy.

Episode 94 - Polish Heaven

I'm super excited about all of these monthly beauty subscription things  (I've already told you all about a couple of my Luxeboxes here and here).  I know they have nothing to do with food and that 99% of you could probably care less, but I just can not resist telling you about the most recent one I've signed up for.  It's pretty much the holy grail of beauty subscriptions, internet!  Julep Maven!  It's a nail polish lover's dream!

To be honest, I signed up because I had a coupon code that got me my first box for a penny.  I had every intention of canceling after that first month and just keeping my almost free polishes and laughing at a company so silly as to offer a promotion like this with no strings attached. Muhahaha silly Julep!  But alas, I got my penny box (2 polishes that retail for $14 each and some cuticle oil) and loved it so much I decided to hold off on canceling until I saw what the next month's box would be like.  When it came along I fell in love with one that too (2 more polishes, makeup bag and some pedicure cream) and never ended up canceling.  I'd say it was $19.99 well spent! I picked out my third box today and I think it's pretty safe to say I'm addicted.  Looks like Julep and their penny promotion wasn't so silly after all!

This is how it works.  Visit Julep and fill out the style quiz.  This decides which of the style profiles you'll get (I'm American Beauty).  Continue to sign up to be a maven and use the coupon code "penny" to get your first month for a penny!  A PENNY! It's basically free!  After your free box you can call them to cancel, OR you can wait it out to see what next month holds then choose to skip the month (at no charge), change style profiles or send your box to a friend as a gift.  A regular box is $19.99 a month with free shipping and usually contains about $40 worth of product.  You always get to pick which style you want to receive each month.  Signing up to be a maven also gets you a discount and free shipping on anything else you order from their store.  Can you see how this quickly gets addicting for polish lovers?!

Now here is where people who blog about things like nail polish would proceed to show you pretty pictures of their nails wearing the polish.  I, however, am just not cut out to do such things.  I tried and my swatches are just not very attractive and the color on the camera is way off and so, instead I will link to real nail people who know what they are doing!

My first box (the 1 cent intro) contained Glenn (a bold berry red shimmer), Oscar (multidimensional gold glitter) and the most amazing cuticle oil I've ever had.  I'm in love with it.  Both colors are nice and pigmented.  Glenn goes on in one coat.  Oscar can be used as a layer over something else or all on its own - 2 or 3 coats and your nail is super glittery!

My April box contained Eva (raspberry creme), Renee (lilac creme) and some pedicure cream, which actually seems to be working on my ridiculously dry Winter feet!  It also came with a free makeup bag and some toe separators.  Again, both colors are awesome and go on in one coat!

In any case, I promise this is the last mention of random beauty products on this blog ever and that I will get back to talking about things I actually know something about!  But seriously - is this not the best thing ever?!

If you're interested, you can sign up here!

Episode 90 - Girly Interlude #2

Dawson is heading out with the boys tonight for a bachelor party/ his own 26th birthday.  Given that girls are generally not welcome at things like bachelor parties, I am taking this time alone to be girly.  Super girly.  It is in this vein that I present you with my second Luxebox haul!  I showcased my first one here. This month was a special "Valentine's Day Edition" and it was some sort of collaboration with Flare Magazine.  To be honest, I'm not really sure what made it so "Flare-esque" other than that my product description card had a picture of the magazine but, meh, I got some cool stuff. Check it out:

Oooooo!

1) Meredeasso Beautiful Body Balm (30 ml) - a nice light body/hand/foot moisturizer.  It has a pretty citrus-y scent that I like but its pretty much just a basic, everyday moisturizer.  Nothing too special, but nice none the less.  It'll be perfect for carrying in my purse. Value: $8.01

2) Lise Watier 24-hour Glam Mascara (mini) - I've actually used this mascara before and I love it.  In fact, I pretty much love every Lise Watier product out there.  They make some nice stuff!  In any case, I was excited to see this in my box and will definitely be using this when my current mascara runs out. Value: $11

3) Dermalogica Microfoliant (13 g)- this is a dry powder that you shake out onto wet hands and work into a paste on your face after washing.  I love, love, love it!  My skin is retarded sensitive, and this didn't cause any redness and left me all smooth and soft.  No breakouts and no dry flakes peeling off my skin for the next week. Yes! Value: $12.48

4) Shu Uemura (5 ml) - Essence Absolue Nourishing Protective Oil for Dry Hair - Haven't tried this one yet since I'm still only halfway through the Chi product I got last month (which is wicked btw!).  Value: $2.30

Bonus product - Meredeasso Face and Neck Toning Gel (7 ml) - also haven't tried this one yet.  Apparently it will firm your skin in 3-5 days!  Hmmm, we'll see! Value: $ 16.80 (a ridiculous price for 7 ml of product!!!  Who the heck is buying the full-sized 50 ml bottle for $120??? Nuts!)

Total Box Value: $50.59 - insane, considering I paid $12 plus tax.

Luxebox is currently sold out, but if you want to sign up for the waiting list you can do it here.

Other girly things I have planned for today:

1) wear Lulus and comfy hoodie all day
2) Visit Shoppers Drug Mart for 20x the points day
3) Watch movie version Water for Elephants (I loved the book)
4) Girly date with the bride of the above mentioned bachelor (Hi Celina!) to eat burritos and make "Team Bride" bachelorette party t-shirts for when it's our turn to have a night on the town.
5)  Possibly a nap...cause naps are awesome.

Coming soon - creamy sundried tomato and asparagus tortellini - totally worth waiting for!

Episode 84 - Girly Time

Ok, it's about to get super girly in here.  Consider yourself warned!  I know it may be hard to believe coming from someone who spends 85% of her time looking like this:

But I really, really like beauty products.  I have banned myself from going into Sephora lest I spend my entire salary in one trip.  It's a problem really...  In any case, to feed my girly addiction I signed up for Luxebox by Loose Button, which is basically a cute little service where you pay $12 a month to get a few make-up/ skin care samples mailed to your door in a pretty little box.  Genius, right?  Right.  So, my first box arrived today and this is what I got:

1) Yves Rocher Rouge Dragee Lipstick (full size) $5- a pretty pink color
2) Benefit Creaseless Eyeshadow (full size) $19 - a sparkly gold
3) A whole wack of little perfume samples :
Prada Candy (nice, like this one)
Prada Infusion d'iris (too baby powdery)
Nina Ricci L'air du temps (awful - smells of old lady house)
Nina Ricci Nina (my favourite - fruity and light)
Paco Rabanne - Black XS (kinda nice - edible smelling)
Paco Rabanne - Lady Million (meh.  I didn't mind it but Dawson hates it)
4) Chi - silk infusion leave-in conditioner
5) Packet of Seattle's Best Coffee (Bonus)
6) Schick Hydro Silk Razor $13.99
7) Fekkai Brilliant Glossing Shampoo and Conditioner

Not too shabby!  Not including the perfume samples (which were probably free) or the shampoo, conditioner, coffee and leave-in treatment I got about $38 worth of stuff in my $12 box.  The products you get in the box seem to be somewhat random and there's no way to guarantee you'll like everything every time, but overall I think this is a really fun idea and I plan to stick with it for at least a little while.

If you are a sucker for samples like me and want to try out a Luxebox you can sign up here:

Stay tuned for something that's actually food related in a day or so...I'm making soup tonight! Until then tide yourself over with this picture of the perogies we made last we made last week - including the dough from hell, which is a whole other story...there was some hanger going on that night, let me tell ya!

Yummy perogies, terrible dough.

Episode 83 - Rebel with a Cause

So internet, 1 month of employment and I've already been sent to the equivalent of the principle's office; which by the way is somewhere I have never been sent before.  I have managed to stay out of trouble for 28 years of life, but only 4 weeks of grown-up-ness.  For real, I never got a detention in high school!   In sixth grade I had the distinction of being the only student in the entire grade who never had to sign the dreaded "blue book" for those who had forgotten to do their homework.  A spotless record!  Tarnished!

So, what did I do that resulted in reprimand?  I told an anonymous stranger that they were beautiful via sticky note.  Yep.  Truly appalling.  I know.

Let me start at the beginning.  Eating disorder awareness week is coming up and a coworker asked if I'd like to participate in putting together some type of creative/fun workshop for our staff and the staff of the adjoining hospital.  Since, hey, I like fun, I agreed! After a brief internet search I came across some really neat ideas; one of which was from this blog: Operation Beautiful
Basically, you write something positive and promoting self-acceptance or positive body image on a sticky note and secretly leave it in a public place for a random stranger to find and hopefully be made just a little bit happier.  It was cute!  So, for a week we wrote these notes and left them around our building and the hospital with plans to ask participants at the workshop if they saw the notes and how they made them feel.  Awesome right?  Apparently not.  Check out this email that was sent out from hospital admin to all staff :

Subject: Pink Heart Sticky Notes

Throughout the hospital pink heart sticky notes have been posted with various sayings and a website address. This address takes you to an eating disorder website.  A few staff members indicated that they saw two girls posting these notes.  While this is a harmless activity we are still a public building and we can’t have people just hanging signs without permission.  Should any of you see these girls please ask them to come see me.

Oh, geeze.  Busted.  Apparently posting sticky notes in hallways is a "no no".  Who knew?  Look at me being all rebellious!

On another note, check out what Dawson and I had for dinner tonight!

Southwest BLTs and Roasted Blue Cheese Potatoes

Quick and easy yum-ness!
Sandwiches:

4 slices of whole wheat bread, toasted
4 slices bacon, cooked
1 tomato, sliced
2 handfuls spinach
1 avocado, mashed in a bowl
1/2 tsp lime juice
1/2 tsp hot sauce
1 pinch of each salt, pepper, cayenne pepper and cumin

These are pretty straight forward.  Mix the smooshy avocado, the lime juice, hot sauce and spices in a bowl then spread the resulting deliciousness on to the toast.  Top this with tomato slices, bacon, spinach and another slices of avocado-mush-covered toast and you're done!

Potatoes:

2 cups of baby potatoes, halved
2 tbsp canola oil
about 1/2 tbsp of each paprika, cumin and garlic powder
salt and pepper, to taste
1/4 cup blue cheese salad dressing
3 green onions, diced

Preheat your oven to 425 F then start prepping your potatoes.  First drizzle the oil over them and sprinkle them with all of the spices.  Give them a good massage to coat them well and the stick 'em in the hot oven for about 15 minutes.  When the come out, drizzle with blue cheese dressing and sprinkle with green onion - its like confetti! Woo!  Party potatoes!

Seriously though, I still think Operation Beautiful is an awesome idea and that you should all participate...just maybe not in your local hospital.  Apparently you need written permission to post sticky notes in a hospital....

Bureaucracy at it's best...

Episode 80 - So That's How I Did It...

Earlier this week Dawson and I had prosciutto-wrapped tilapia for what is probably the 100th time since we started dating. The first time I ever made this recipe was probably only the 2nd or 3rd time I ever cooked for Dawson.  Apparently it was good because just this week, when planning out our menu I heard these words

"Mmmm prosciutto-wrapped tilapia, the dish that won you my heart".

So that's it ladies and gentleman.  The way to a man's heart really is through his stomach...particularly if you upgrade his diet from beans in a can to fresh fish wrapped in salty cured meat.

Ooooh, the early days...

Coincidence?  I think not!

Episode 72 - 14 Things

Oh, hello there internet friends!  Long time no see!  It's been a busy two weeks since Halloween!

14 Things That Have Happened in the Last 14 Days

1) I went for my first ever grown-up job interview for the most perfect of dietitian jobs.  It went well, even though my sock bun (that I learned about on Pinterest!), which was supposed to have the effect of making me look professional and put-together, fell out to expose the sock on my head, making me look disheveled and weird.

2) I was called the next day with the job offer!  Yes!  As of December 19th I am gainfully employed as an actual dietitian!  Most!  Exciting! Phone Call! Ever!  Bills will be paid, a house will be bought and Dawson and I will spend our Sunday's lounging just like I wanted! Sometimes my luck astounds even me.

3) I went on my first ever business trip to Thunder Bay, Ontario.  Unpaid still, of course, seeing as I am still just the poor sucker intern. It was ...cold...and far less pretty than the Thunder Bay of my imagination.  I've decided one should only ever visit Northern Ontario a) between the months of May and August and b) with the intention of avoiding any major city and spending your time hiking, camping and being otherwise outdoors-y.

4) Related to #3 - I took my first flight on a propeller plane! This was kinda fun actually.  Check out my view!

5) I submitted (with much relief) my notice that I will be dropping 3 out of my 6 Zumba classes I teach every week.  My muscles are thanking me already.  Maybe now I'll have time to run again!  Oh, how I miss my runs with the dog.

6) Dawson and I test drove a car! With the new job beginning in the opposite end of the city from Dawson's job we figured it was high time we bit the bullet and bought a second car.  I spent Friday afternoon shopping for car insurance.  Look at me!  Doing grown up things!  Who knew?

7) We inherited a china cabinet.  We don't own any china.  On a related note, I am accepting suggestions for things other than china to display in china cabinets. What is the point of china exactly?  Better yet, what IS china?  Is it just fancy dishes?  Would it be weird to just display our regular dishes? Please weigh in.

Are you still reading?!  Wow, you're as bored as I am!

8) I went shopping for a bridesmaid's dress for a wedding next summer.  Dress shopping is fun!  You get fawned over and pinned and clipped and shaped.  Plus you get to stand up on a pedestal and have everyone "ooo" and "awww" at you.  In case you are interested, I will be wearing this, in solid black and shortened to mid-calf length.  It needs to be shortened because a) I will probably trip and kill myself dancing in a floor length dress and b) to show off the incredible glitter shoes I will be wearing.  Which brings me to...

9) I am making incredible glitter shoes.  I imagine they will look just like this when they are completed.  Pictures will be posted.

10) We (read: I) decided we wanted to send out super cute mushy Christmas cards to our friends and family this year, so we broke out the Christmas lights, plopped ourselves in front of the camera and self-timed some cute shots.  The cards were delivered last week and they are everything I hoped they'd be - vomit inducingly adorable. I'll scan one closer to Christmas and you can all get a virtual holiday greeting from us!

11) I started my Christmas shopping!  I plan to be finished before December 1st so as to avoid having to set foot in a mall during the chaos that is the Christmas season.  My five horrendous years of retail experience have taught me well.  You could not pay me enough to visit a mall on Boxing Day ever ever again.

12) I got banned from laundry duty.  Yep.  Banned....due to incompetence.  I am the worst housewife ever.  I heard somewhere that you could wash Uggs and that they would come out looking good as new, which they totally do, by the way, but I felt it to be wasteful to do a whole load with nothing but some boots in it.  Now, a person who is good at laundry might have taken a second to think and then filled the rest of the load with nice dark colors.  I, on the other hand just tossed in whatever was lying around.  Results - things that were previously white came tie-dyed with brown splotches.  Great.  Thinking myself brilliant, I decided to fix said problem with a little bleach.  The bleach worked...a little too well.  A drop somehow spilled on my Lululemon sweater leaving a nice orange splotch on the arm.  Ugh. Hence, Kristy is now banned from doing laundry.

13) We visited the new Valley BBQ on highway 7 in CP, which is something I highly recommend you all do asap btw, and had my first taste of buffalo, or buffa-loaf as the menu called it.  Delicious.

14) During all of this chaos, one thing I haven't done much of is cook!  I'm pretty sure I've been living off of junk and take-out!  *gasp*  More recipes coming soon...I promise!

Episode 70 - Fail

I know it may seem like Dawson and I are infallible and that we dine on deliciousness every night, but no, occasionally I suck.  A lot.  Today, I ruined taco night.  Tacos.  From a box!  Ruined!  Embarrassing. Damn you microwave with especially sensitive buttons causing me to heat the soft tortillas for 3:00 instead of just :30 like I had intended.  Damn you!

It's all good though.  Dawson says he still loves me.
Couch love.

Episode 62 - Broke Food

Things you cannot do when you have no money:
  • shop for fancy new clothes
  • go on vacations...even the Groupon kind that keep tempting me with daily emails
  • buy fancy cheeses
  • eat at restaurants
  • buy a car that doesn't sound like a monster truck
  • buy a house that you can walk around in your undies in
  • basically buy or do anything that is not a basic life necessity

Things you can do when you have no money:
  • Become skilled mixing and matching your old clothes to give the appearance of a far more extensive wardrobe that you actually have
  • Stay home and plan all the fantastic vacations you will take when you are eventually gainfully employed
  • Spend a Saturday afternoon making DIY bracelets with your mom
  • Eat your mom's fancy cheese
  • Stay in for date night and drink your homemade wine from last year
  • Duct tape the failing rubber pipe on the underside of your car's exhaust system

Or, you could spend your "essentials" money on adult onesies and then feed yourself for a week with this soup.  The whole pot cost us $8 to make.  Good thing our priorities are in order!

Curried Butternut Squash Soup

With spicy chili flakes on top!
1 tbsp olive oil
3 cloves garlic, minced
1 onion, diced
1 butternut squash, peeled diced
2 tbsp Indian curry paste
1/2 tsp cumin
1/2 tsp red pepper flakes
5-6 cups low sodium chicken broth, depending on how thick you like your soup
3/4 cup black beans, rinsed

Heat the oil in a heavy bottom pot then add the onions and garlic.  Cook for about 5 minutes or until they start to smell yummy.  Add the squash, curry paste, cumin and red pepper flakes and cook for another 5 minutes.  Add the broth, bring to a boil then reduce heat to low, cover and simmer for about 30 minutes or until the squash gets nice and mushy.  Puree the soup with a hand blender until it gets nice and creamy.  You may have to add a little more broth here if it gets too thick for your liking.  Toss in the beans, stir and heat through.  Serve in a nice big bowl with some thick pita bread...or soda crackers if like me, you forgot to buy pita bread.

In all honesty though, this soup was really really good!  I'd definitely eat it even if I wasn't pinching pennies.  It was creamy, warm and just a little spicy.  Perfect for a cold, rainy fall day!

Also a plus, I discovered making your own jewelry is actually really really fun!  I'm kind of addicted now.  Check out these two that I made from this tutorial:

Kinda neat, eh?

Try them out!  So fun!

Episode 55 - Love-fest

Sorry internet!  I feel like I've been a big giant whiner lately and I think it's high time I redeemed myself!  I swear, I'm usually a very happy person and I blame the recent "*blah blah blah* my car is broken, my cell phone sucks, I had to wear a jacket today *blah blah blah*" junk on my aforementioned end of summer depression.  So much negativity.  Now suddenly it's Labour Day weekend!  Summer's last hurrah!  So, in honour of this wonderful holiday I thought that rather than mourning the death of my favourite season, from now on (or for this year anyway) I should celebrate!  Positivity begins now!

So, without further ado, here is a decidedly positive list of things I am currently loving, in no particular order.

1) Krema brand Greek yogurt.  Oh my, have you tried this stuff?!  Its like eating a bowl of cheesecake batter with a spoon except you don't have to do it all 007-style when no one is looking.  It just might be my favourite dairy product and that's saying a lot coming from someone who believes that Brie cheese is essential for life.  It's just so creamy and thick!  Do you remember that old oatmeal commercial with that Scottish (at least I think he was Scottish, I'm terrible with accents) guy claiming that real oatmeal should be "thick enough to stop a bullet"?  Well, internet, this yogurt is probably juuust about bullet proof - being 9% milk fat will do that to a yogurt.  That's right, 9%.  This stuff enters dessert territory- go easy on it...or learn to like running marathons.

2) This song:

3) Actually, while we're on the subject of music, this song too:

Both of these just give me this uncontrollable urge to dance around the room and sing the lyrics at the top of my lungs.  So! Darn! Good!

4) My new riding boots!  On my last day of my retail job I was given a cash bonus!  I think it was half to let me know I was an especially good retail slave and half to try and bribe me into staying.  Obviously the bribe was unsuccessful BUT I took the bonus anyways (duh) and bought myself these babies!  Can't wait to wear them, the box they are currently sitting in just does not do them justice!

5) Perogies.  When I was at university in Kingston my roommates and I probably ate perogies 3 times a week.  At least.  We ate so many perogies that I'm surprised we didn't cause some sort of perogie drought across the city of Kingston.  I know.  The dietitian side of me cringes with I think about it.  After graduation, and when I learned to cook things other than perogies,  my obsession subsided a little and up until I found this recipe, it had been a good couple of years since I last had any at all.  I'm sure market shares of perogie companies have suffered greatly.   In any case, if you like perogies you need to try that recipe.  Homemade perogies trump frozen perogies anyday and these instantly brought back memories of living with my roomies and all of our shenanigans the studying we did.  I  miss you guys!

6) Sephora by OPI nail polish in "Under my Trenchcoat".  Sephora describes this as "opaque light-grey khaki with metallic gold".  I describe is as the perfect neutral color to wear to my internship during which I'm not supposed to wear nail polish.  I know I should just suck it up and follow the rules about the "no nail polish" thing but it's really a silly rule and silly rules were meant to be broken.  Plus, who could be opposed to such a pretty, professional looking color?!  I must buy this nail polish.

7) The movie "Crazy, Stupid Love".  This movie has everything - love scenes, fight scenes, that guy from Breaker High's abs...you can't afford to miss it.  I saw this with Dawson on a date night at the drive-in.  Which brings me to my next point...

8) The drive-in!  The only one around here is behind a barn in Port Elmsley - Port Elmsley Drive-in.  You need to go.  It makes such a perfect date night (side note: I also love date nights)!  Wear your pjs, bring some snacks and cuddle up with your love over a double feature!  All this for only $10!  Go before they close for the season, showtime starts at sundown!

9)  Old photos.  This isn't new; I've always loved photos.  Dontcha just love looking through your parent's old photo albums?  Incredible.  Go ask you parents if you can borrow one for awhile and spend some time reminiscing.  You just might find some gems like these:
Dawson is such a little man.
Little blondies - my brother and I.

 10)  Vacations.  Everyone needs a vacation now and again, right?!  I just love travelling and visiting new places!  Last year, Dawson and I went on a last minute trip to Cuba and it was the most relaxing, wonderful week of my life.  This year, since being a student doesn't pay very well, it's not looking like we're going to get to go anywhere.  *insert teary sad Kristy face here*  In any case, the following is my bucket list of places I need to go before I die:

  • Bali
  • Fiji
  • Thailand
  • Spain
  • Greece
  • Turks and Caicos
  • Portugal

I just realized that pretty much that entire list is composed of beaches I need to visit and foods I need to eat. At least I know what my priorities are!

So there you have it - 10 things I love!  I promise to try to be less of a grump from now on...or at least until winter hits!

Episode 47 - Kristy doing stuff

Ooo I have a day off! Lets tell the internet what I did!

Was woken up at 7 by Dawson reminding me I had an optometrist appointment.  Grudgingly got out of bed and had breakfast - toast with crunchy peanut butter and marmalade.  Normally I would have had sliced banana but we were out and I had such a huge jar of marmalade left over after making this (which is delicious BTW) that I figured I might as well use it up.  Showered, dressed and otherwise prepared to enter the world.

Attended appointment and was told I still have 20-20 vision.  Amazing.  Was then given eye drops to inspect "the health of my eyes".  Promptly became lightheaded, almost passed out and had to lie down.  Wow.  I am cool.  Attempted eye health inspection a second time after cold sweats subsided - faint-y feelings return.  Had to lie down a second time.  Eye exam declared over.

Walked to Walmart to purchase a new camera.  Did I tell you my old one (which was a piece of junk anyway) was a casualty of our very damp exit from Algonquin Park last week?  It was.  Zero functionality.  In any case, waited 15 minutes for them to finally tell me the model I had decided on was sold out.  Wandered Walmart aimlessly for 2 hours (!).  Left with new nail polish ( Essie Sew Psyched) and some grey tights that were on clearance.  Almost left with a super cute pair of beige suede ankle boots too (only $25!!) but then ended up putting them back reasoning that if I didn't buy them I could allow myself to spend $25 more on the knee-high riding boots I really want.  Plus how long are $25 beige suede boots really going to say pretty and beige anyway?  Probably a good decision in the end.

Home. Purchased 5 clear screen protectors for my new phone (Did I tell you my phone also died? Not due to a soggy canoe trip but just because it sucked.  Don't ever buy a used Blackberry online.  It will probably suck) on Ebay for 98 cents.  98 cents!! Thank you very much phone kiosk guy in Bayshore who told me to look there!  Painted nails then wasted an exorbitant amount of time looking at things that I can't afford on the J. Crew website (Why do I suddenly feel like I need this?) then decided it was time for lunch.

Mmm coffee.
Walked into town to dine at one of my favourite lunch spots The Good Food Company  Spent 75% walk admiring new nail polish color in the sun and the other 25% berating myself for the crappy paint job.  Saw a really random Japanese tour group (in CP?!) checking out the "sites". Ordered an iced latte and the deli salad combo plate.  Realized having lunch alone feels oddly but wonderfully indulgent.  Made a mental note to do it again.  Left restaurant stuffed full of goodness.
Pita, hummus, couscous and grilled veggie salad,
potato and asparagus salad
Walked to library to get new reading material.  The library is totally underrated!  It's full of awesome books and they just give them to you to read.  For free!  WTF?  How does a place like that even function?  In any case, checked out an embarrassing book since, hey...it was free and I only have another 2 weeks before my free time dwindles to nothing.

Walked home, saw strange Japanese tour group again - this time getting their pictures taken with an officer and a cruiser in the parking lot of the police station (WTF?).
Creeper photo taken over my shoulder while walking away so as to not look conspicuous...
Got home, bummed around until Dawson got home from work ('cause one of us has to work for a living) then took the Roxie dog out for a nice long walk.  Nothing of consequence happened on the walk so I'll just skip to the part where we got home and made ourselves a delicious dinner of Thai-incredible-ness.  This sauce over a chicken, red pepper, snow pea and onion stirfry.  Mmm spicy peanut-y creaminess. Dawson would also like me to mention that the stir fry contained rice.

Now to retire to my fat pants and curl up with my trashy book for the night. Ahhhh days off you need to be more plentiful.
